Homemade Gluten Free Pizza in Less Time Than You Put the Kids to Bed!

Last night I had one of my Eureka food moments that I enjoy so much. After having had a most dis satisfying experience with Udi’s GF frozen pizza (how can anyone honestly ever enjoy frozen pizza really?) I decided to make homemade pizza using the new GF tortillas I got at Whole Foods.

No, they are not organic and they do contain corn and other ingredients that may have GMOs but until I find organic GF tortillas these will have to do!

So, I spread sundried tomato pesto on them and some Freybe GF salami as well as chopped fresh tomatoes (minus the seeds as they could make the tortilla too mushy). I also spread shredded organic old cheddar cheese and some dry basil, freshly ground non irradiated black pepper and I baked them at 400 F until the edges became golden. Scrumptious.

Great idea for an incredibly quick and healthy gluten free meal.

These little guys (I made three) were just as good as the local GF pizza joint (The Rebellious Tomato on Denman) and a whole fortune less expensive. And the toppings are as limitless as your (healthy) imagination!
